Grilled Mahi-Mahi Taco Awesomeness

Tonight, as I craft this post, I am sitting in my chair after an hour and a half of battling Bennett to sleep. My sweet, happy, easy going baby is roughing it through the time change. Naps are back on schedule and life during the day is normal, but bedtime is torture. And I can't have wine during the week (self-imposed). So I will make this as cheery as possible, but I'm pooped, and I am in the midst of reading The Godfather and am anxious to get back to it (nerd alert). Was that too much information for the start of a post?

Before Bennett's bedtime meltdown, I made an amazingly, quick, fairly healthy and incredibly fast meal using my new favorite seasoning. This guy:
 I covered two mahi-mahi fillets in it and popped them on a smokin' hot grill.
 Meanwhile, I sliced up some cherry tomatoes (a regular one would be fine, this is just what I had), an avocado, some cilantro, a jalapeno and half an onion. I had corn left cover from dinner two night's ago, so decided to use it again in the final prep.
I mixed it all together, adding a pinch of salt and juice from half a lime. I tasted it with approximately 5 Tostitos. 
 I pulled the fish off the grill, cut it into strips and stuck it on a warm tortillas. I added my salsa, several kernels of corn, a pinch of Mexican cheese and a few drop of hot sauce.
Boom, dinner is served.

Now back to my book. Happy Hump Day!

Good work Kate! Hope that baby starts to sleeping better for you. Aaaand as I type this, my little one year-old is screaming from his bed. Delightful.

Wow for someone that doesn't eat sea food that does look really tasty!!! Sorry to hear your lil man is having a ruff adjustment to the time change.

yum!!! I'm so glad you shared this, I love a good seafood recipe. I seriously cannot believe I never had fish tacos until last year, they are one of my absolute favorite things to eat. We will be trying yours soon!:)

My first thought upon reading this post was, "OMG it's Friday! I didn't buy any fish yet!" But you are one smart cookie- posting a yummy Friday recipe two days in ADVANCE to give people like me time to make this ON Friday. It takes me a minute sometimes, but I'm slowly starting to catch on...

Isn't it crazy how one stinkin' hour can throw off the little people's schedules SO MUCH?! Whoever came up with DST clearly did not have children. If I ever meet the person who invented this crazy thing, I will be sure to give him (because OBVS it was a man) a big punch in the face from all the moms out there who have dealt with the screwed-up sleep schedules because of it. ;)

Aw, I feel for poor Bennett, since the time change has thrown me for a loop, too, the past couple days. It's amazing what the shift of just one hour can do to your internal clock! What an absolutely yummy dinner!

I have never tried that seasoning but have heard good things about it. That is my idea of the perfect dinner, looks great, tastes great, fast and healthy.

OMG, I am eating these right now with tilapia. SO GOOD. Thanks for sharing! Definitely the best thing I've made since I moved into my own apartment. :)
