Apple Pumpkin Muffins

Since our little apple picking outing last week, we have been trying to use up the bushel of apples we came home with. We have had apples for snack, made apple pancakes for breakfast and had cinnamon apples as a side dish for dinner.
Peel, Slice and saute apples in butter, cinnamon and sugar. You'll thank me later.
In keeping with desire for fall to be near, C and I decided to make some Apple-pumpkin muffins and adapted this recipe from allrecipes.com. What you'll need:

  • 2 1/2 cups all-purpose flour
  • 2 cups sugar
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 cup canned pumpkin
  • 1/2 cup vegetable oil
  • 2 cups chopped peeled apples
  • STREUSEL (aka the BEST PART)
  • 1/4 cup sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 4 teaspoons cold butter
  • Two grumpy helpers -->

  • 1. Mix together all the dry ingredients in one bowl.
    2. In a separate bowl, blend eggs, veg. oil and pumpkins.
    3. Add dry ingredient mixture to wet ingredients and mix until just blended.
    4. Add apples.
    5. Spoon into muffin pan (and leftovers into a bread pan if you are feeling lazy like I was)
    6. Top with struesel mix, made by combining sugar and flour and cutting butter into mixture until crumbly.
     7. Bake at 350 for 35ish minutes until your house smells like fall.
    We still have apples to spare, so Bennett is now doing his part not to let them go to waste.
